Grape: Wente Clone Chardonnay
Farming: Dry Farmed and Organic
Vinification: These wente Clone Chardonnay grapes were organically dry-farmed and harvested from DeRose Vineyard in the Cienega AVA. Harvested at 21.5 Brix and 2.2 g/L Malic acids these grapes were destemmed and natively fermented on skins for 7 days before being pressed into flex tank eggs where they finished primary and malolactic fermentation natively. Subsequently, they were racked into neutral oak barrels for four months before being bottled at 25 ppm free SO2.
